can't seem to adjust the width of cells...

strange this, but I have drawn a table and Word won't let me adjust the width
of the vertical columns (or horizontal ones for that matter)

Any ideas?

What have you tried doing to change the dimensions?

Can you change the dimensions if you insert (rather than draw) the table?
