can't view bccs in my sent email

Email Client: pop

The reason is probably that I don't archive my email in Entourage but in various project folders in a folder called My Documents, an artifact that was migrated to this iBook when I switched from Windows to Mac. (Probably wasn't the usual way to archive email in Windows either, but I'm used to it.)

Anyway, I'd like to be able to go back and see who was bcc'd and I can't, whether I saved the email as email or as text.

Any way to work around this and view the bccs?

No, sorry. When you export a mail message from Entourage by dragging it, it
simply exports the entire source of the message. The BCC is intentionally
omitted from the message source so that recipients cannot see to whom the
message was sent. The Entourage database keeps a record of this
information, which is why you can see it if you keep the sent message
archived in Entourage.
