how do i turn off the auto formatiing that causes Outlook to automatically
capitalize the first letter of each sentence?

Disable AutoCorrect or configure its options the way that you want it to
behave. Whether you do it in Outlook or Word depends on which you use
as your e-mail editor and that also depends on WHICH version of Outlook
that you use but did not mention.
