Despite the fact that my categories wont sync with my exchange server, i'm using categories anyway. any chance anyone knows of a way to keep my "from" and subject" lines black, while allowing the "category" to take on the color I've assigned?

Sorry, but this is not possible. Let MSFT know you would like to be able to
edit colors. The best way is to send feedback to Microsoft.

When working in Office, you can use the ³Send Feedback² option under the
Help menu in all of the Office applications.
