I don't know what you call it, but I'm referring to the box that shows
which cell is selected in a spreadsheet.

On my setup, the box is a very pale blue and I can hardly see it. Is
there a way to change its colour/intensity?

XL takes its highlight color from MacOS. You can change it by changing
the color in the System Preferences/Appearance preference pane. You'll
have to quit and restart XL for the change to take effect.

Alternatively, you could use something like Chip Pearson's RowLiner:
