I have a full color gif in a header and I would like to
change it to black and white. How do I do that?

Click on the graphic. The Picture toolbar should be displayed. Use the Color
button to change to Grayscale or Black & White. If you're looking to reduce
file size, however, this will have no effect because Word will preserve the
original image information in case you change your mind. If you want to
insert a smaller graphic file, open the image in an image editing
application and make the change there, then insert back into the Word
document.
