Change IP of Project 2003/Sharepoint front end server

Is there any problem with changing the IP of a Project 2003 /
Sharepoint front end server? I'll delete the DNS record for it and
let it recreate after reboot of course.

The IP isn't embedded anywhere in Project or Sharepoint right?

Changing the IP address shouldn't be a problem as long as your new DNS record reflects the new address and the same hostname.
