I am bringing large Word 97 files from an old XP computer into a new Vista
computer with Word 2007. ' change to = . Example: Joe's Diner changes to
Joe=s Diner. Also Some of the dashes change to "A" or "C". Can anyone help.

This is a classic sign of the document's having originated in WordPerfect,
using the WP Typographic Symbols font for quotes, apostrophes, dashes, and
the like. As long as you have the font installed, you might not notice that
Word is using these symbols instead of the ones built into "(normal text)"
(though they will be the same--and rather ugly--in every font), but when you
don't have the font installed, then you get the result you see. Although you
can "fix" the problem by installing the font, this won't help if you send
the document to someone else who doesn't have it installed, so the only
recourse is replace the symbols with the appropriate ones in the default
paragraph font.
