Change Underlying text?

I've got a page or two of handwritten notes. The first line of text on the
page sets the page title. This has been interpreted incorrectly so the page
title is wrong. I can't change the page title, must change the handwriting /
text. Is there a way of changing the underlying text but keeping the
handwriting displayed?
I would also like to be able to convert to text, but be able to see what I
wrote to confirm that it has been correctly converted - only losing the
handwriting after I've confirmed I'm happy with the text.

Are either of these things possible?

The quickest way to do this is to erase and then re-write the title so that
it is more legible and is converted to the correct value.

Thanks, I was too busy trying to think of something technical than to do the
obvious! I still think a way of reviewing handwriting conversion would be
useful. Converting a whole page in one go is not feasible if some of the
handwriting isn't going to be converted correctly.

If there is no text entered in the "Title" field, ON does
automatically take the page's name from the first item on the page.
This is a truly great feature.

If one wants to change this, one can just enter a dedicated *title* -
be it by handwriting in the Title filed or by later typing in a title.
