Changing all stencil shapes' text size, line weight, etc.

Can I change the default font size, change the line weight, remove color and
shading, etc. for all shapes in a stencil or for all shapes that I drop into
a drawing?

The US Patent Office has drawing requirements for patent application. These
requirements include font size and line weight and (for most drawings) forbid
color and shading. Basically, the drawings must be simple, black-and-white
line drawings. Assume the drawings will be block diagrams of computer and
communication systems, flowcharts and the like. Visio stencils have nice
shapes, but the default fonts are too small, and most shapes are colored
and/or shaded. (Example: "Network and Peripherals" stencil.) In some cases,
the default line weights are too low. (Example: "Basic Flowchart Shapes"
stencil.)

In Microsoft Word, I can change default font sizes, paragraph formatting,
etc. in a template, and all documents created with that template inherit the
defaults. Similarly, I can define paragraph styles. I'd like to do something
similar in Visio. However, individually editing each shape in a stencil would
take too long. Furthermore, it wouldn't necessarily lead to consistent
results. I'd have to remember to give each shape the same default font size,
for example.

Is there a way I can change the default font size for all shapes in a
stencil (or all stencils) or for all shapes I drop into a drawing? Can I
globally remove the color from all shapes in a stencil (or all stencils) or
for all shapes I drop into a drawing?

Visio styles may be part of the answer, but I see that each shape uses many
styles. For example, the Database Server shape refers to many line, text and
fill styles (Normal, Button, Handheld Outline, etc.). Do I have to, for
example, remove the color and shading from all of these styles to get a
simple black-and-white line drawing?

While I don't know how to change the defaults for line weight, etc., it is
quite simple to set these things after you've finished your drawing. Select
everything on the page by pressing Ctrl+A then adjust the line color and
weight, font size, etc.
