Changing an assistants name in Gloabal address book

We have a Windows 2000 sever running Exchange 2000. One of our users who are
using Outlook 2003 noticed that under the Global address List, that their
information under properties was incorrect. We corrected most of this
through AD but we have been unable to change his Assistants name. Is this
possible? We were not able to find this field in the Active Directories Users
profile.

I would be great full if you could inform me as to how to rectify this.
