I'm following up on the advice in an earlier thread:

To change the category of a large number of Journal items, I can first
drag them into the "No Category" category, then drag them to the
destination category.
The problem is that I don't have a "No Category" category. I tried
creating such a category with a dummy Journal item. However, dragging
Journal items into that category does not erase all category labels
from those Journal items. Obviously, I misunderstood. Could anyone
clarify this?
