Changing default templates?

I would like to change the defaults that come up on new Office
documents (Word, Excel, PowerPoint, etc). (E.g: change fonts, have
default footers, etc.)

How can I do this? I thought there used to be templates, like
normal.dot, and so on, but Spotlight can't find them on my hard
drive...

THere is still one. It's either in the Microsoft Office 2004/Templates
folder or in your Microsoft User Data folder :)

But note that on the Mac, the default template is

Normal

- i.e., no ".dot" extension.

And once you locate that Templates folder, you can create a new
subfolder, say "My Templates", and create your own custom templates
there. They will show up in the templates list in the Project Gallery
(under File menu).
