Changing fill color gradient on chart

I am working on a table and am trying to change the fill
gradient. I've been able to fill with a color, but so far
do not have control over the percentage of fill. When I
use excel help, it says to click on "more fill color"
near the arrow on the paint bucket. I never get that
option. Thanks.

Excel charts are not Graphic applications and you can not
change the percentage fill. However, you can change the
colour and fill.

Right-click on the bars? and click Format Data Series
You can change the fill effects from a standard range
including gradient fill with two colours.

you can also format the plot area (chart Background) and
insert a suitable picture if you like.
