Changing line spacing to single?

When beginning a letter, pressing Enter always enters double spacing; I
changed paragraph spacing and line spacing to single, but does not change
anything, continues to double space when pressing Enter (hard return)
Annoyed with the automatic double spacing and defaulted letter format when
teaching my students. (on a network) What am I overlooking?
