Changing Reference Cells on Edge?

I am using survey data, and when I scroll to the right past a certain point, I lose the subject code column because there are a lot of columns. Can I change the numbers and letters that label the rows and columns (are they the "reference cells?")? I would love to either be able to change the gray row numbers to subject codes or somehow scroll to the right but have a fixed column not scroll, so I know the subject code throughout the width of the document.

You can't change the row and column headers (except to toggle column
headers between letters and numbers).

To keep the subject code column from scrolling, select the cell to the
right of that column in the first row, then choose Window/Freeze Panes.
