Changing submit values

I am testing to submt a form via email but I want to change the values that
are sent to the recipient. The values that need to be changed are coming from
linked drop down list boxes linked with an ID.
I select text values in the drop down but once I submit the form then the
attachment has ID values(linking the drop down values) instead of text values
I selected in the drop down.
