changing tab color

Anyone know how to change the default tab color on each sheet. My
excel x has a very annoying yellow that barely can be read. I
actually have to manually click on each sheets tab to review that
sheet to see what it is.

You can't. The yellow color is a bug that, to the best of my knowledge,
was squashed with the updates you'll find at

Apply the 10.1.2, 10.1.4 and 10.1.5 updates if you haven't already done
so. Then repair disk permissions by running the Disk Utility from the
Applications:Utilities folder.
