Hi Ed -
In a new, blank file select View> Master> Slide Master. Select & reformat
each individual type of placeholder with the font specs & other formatting
you want to use. You can also do any additional customizing, such as
backgrounds, color schemes, logos, etc. Save As> Format: Office Theme with
whatever name you wish. It will be added to the Elements Gallery
automatically.
When you create a new file click the Slide Themes button, Custom Themes,
then click the icon for your theme. Alternatively, you can create the new
presentation by going to File> Project Gallery> New, select My Themes, then
dbl-click the custom theme you want to use.

PowerPoint doesn't have a "default font" as such. The font is determined
by
the Slide or Document Theme and/or the formatting of the placeholders in
the
Slide & Title Masters.
So the question I should have asked is what do I have to do so I open
a new, blank presentation that does not use Calibri?
