Where are published projects saved and how do you change the name of one of
these files?

There is a tool available from the M$ website called Project Renamer. You should be able to find it ther by doing a search.

If you are using Project Server 2003, you can use the Rename Project
utility, available for download at the following link:

Before you rename the project using this tool, make absolutely certain that
the manager for the project has no unprocessed task updates on the Updates
page in PWA.

If you are using Project Server 2002, the only way to rename the project is
to do the following:

1. Save the project as an .mpp file
2. Ask the Project Server administrator to delete the project from the
Project Server database
3. Import the project with its new name using the Import Projects to
Enterprise wizard
