How do You actually do it?

This didn´t get me far enough...

Change the Office color scheme
You can customize the appearance of Microsoft Office Excel 2007, Microsoft
Office Outlook 2007, Microsoft Office PowerPoint 2007, and Microsoft Office
Word 2007 by selecting one of the available color schemes.

Do the following in these 2007 Microsoft Office system programs:

Excel, PowerPoint, Outlook, or Word
Click the Microsoft Office Button , and then click Program Name Options,
where Program Name is the name of the program you are in, for example, Word
Options.
Click Popular, and then click the Color scheme that you want.
Note Blue is the default color scheme in all 2007 Office release programs
that support this option.

I'm not sure about what part you were having an issue with. The steps listed (or in Word using Alt+T,O) take you to the three
choices (in Office 2007 with Beta 2 Technical Refresh update, or two choices in Office 2007) for Office 2007 color schemes for the
screen layouts.
