Is there a function that returns the number of characters
in one cell. I have large amount of text in a cell I would
like to count. Also, what is the maximum number of
characters in a cell?

Number of characters in A1:-

=LEN(A1)

Max Characters out of Help files:-

Length of cell contents (text) 32,767 characters. Only 1,024 display in a cell; all 32,767 display
in the formula bar.

If you toss in a few (or a lot) alt-enters (to force a new line within the
cell), you can get a lot more than 1000 characters to show.
