Character in form field does not show

I've created a form field in W 2003, with a few drop down menus. There are
ampersand (&) characters in the text that I entered as options in those
menus, but when users fill out the form, the ampersands are not longer there.
The font does not seem to be the problem, since I tried with different ones
and nothing changes.
I REALLY need help! I'm on a tight deadline!
