Character/symbol shortcuts

How do i set up character/symbol shortcuts in one note? I frequently need to
insert the Pi symbol for plaintiff, and Delta symbol for defendant. In Word,
it is easy to go to the character set up and enter a shortcut (like Alt + P),
but there is no option for this in One Note that I'm aware of. Please
advise...

What about either using Insert--> Symbol or setting up the two symbols as
AutoCorrect entries (Tools--> Autocorrect Options, add the entry)? Would
either of those options work?
