The numbers 1/1/00, 1/8/00 are really 1/1/1900, 1/8/1900, etc., which are
how 1, 8, etc. appear in date format. This is because Excel doesn't
recognize the X values as dates. First make sure the chart has values
assigned as X values: select Source Data from the Chart menu, click on the
Series tab, and make sure a range is specified in the box for Category
Labels. If not, Excel uses 1, 2, 3 by default, explaining your strange axis
labels.

If there is a range specified for Category labels, make sure they are truly
dates, and not text labels that look like dates but that Excel doesn't
recognize as such. Remove horizontal formatting (e.g., left or center
alignment) from the cells. If the values are not right aligned, they are not
numerical. Assign a date or other numerical (non text) number format to the
cells, then copy a blank cell, select the cells, and use Paste Special from
the Edit menu, with the options Values and Operation - Add. Adding zero
(from the blank cell you copied) forces Excel to reevaluate the
uncooperative cells as numbers.
