While it may be possible to type some Chinese in Word and Excel for
Macintosh, the only Asian language that is supported in Office for Macintosh
is Japanese.

Accessing different language keyboards and input method is found in System
Preferences - International in OS X.

As someone already indicated, Office X includes a "language register" utility
that can switch the suite to Japanese. This will enable double-byte
characters, so you can type Chinese and get the correct spacing, but some
system-related dialogs (e.g, the print dialogs) will be in Japanese then.

There is also an independent patch to enable registering the suite in
Chinese or Korean.
