Try as I might I cannot access the clipboard toolbar in word for mac.

That's because there is no clipboard toolbar in Word for Mac.

You could create a custom toolbar that contained a similar set of
controls, but the macros to implement them could be somewhat complicated
given the differences between the Mac and WinOffice clipboard.
