Closing of Projects in Project Server

Has anyone developed a process in which a Project can be "Closed" (ie, no
further time can be charged against it) and have the tasks related to it be
filtered out of the Timesheet? We want the projects to remain in the server
for historical purposes but want all other "Resource Views" to have the
project data hidden.
I have tried using a Project Status but it isn't available to filter on. I
also tried creating a task status field that would allow you to close Tasks
but I can't seem to filter on it either.

in the "build team from enterprise window (right side)", you can set the
booking type for every resource from "committed" to "proposed". This should
remove the project entry from the timesheets of your resources.

Don't know if this works on all configurations of MS Project Server, but it
seems to work on most.
