Which version of Outlook?

Outlook 2007 introduced colored categories and I use them daily for
color-coding events.

Prior to Outlook 2007, colored labels were your option:

You may want to upgrade to Office 2010. It is currently available for
beta testing.

Text is changed using automatic formatting. It's a View setting so you need
to look for Customize view command on the View menu.
