I am creating an elementary spreadsheet, and I want to place headings at the
top of each column.

Hi

generally, you just type them in the first row and format them differently
from your data, if you want them visible when you scroll down the worksheet
click in cell A2 and choose window / freeze panes.

you could select the whole worksheet, choose format / cell - go to the
protection tab and untick locked, then select the first row (after you've
typed your headings), choose format / cell - protection tab, tick locked and
then choose tools / protection / protect sheet - to stop people changing
this row of headings, but personally i would think this was a bit of
overkill.
