How come when I sometimes open Excel.. the columns are
headed with numbers and not letters? How do I stop this
from happening?

Tools > Options > General tab, uncheck R1C1 reference style.

IIRC this is a setting that is taken from the first file opened. So,
anytime this happens, change the setting given by Anon, then save the file.
