Comparing tables for changed records

I receive a nightly extract from a database of employee records. I'd like to
be able to compare 2 successive extracts and produce a list of changed
records (either new or tweaked). This list of "deltas" will be used to update
a system hosted at a service provider. It would be nice to automate this
comparison and generation of the delta file. I know this must be pretty
easy, but could use some help. It's been a while since I coded....

by chance, does the record (row) carry a date of creation or update?
