HOW DO I CREATE A FORMULA TO CHANGE THE FILL COLOR OF MULTIPLE CELLS WITHIN A
COLUMN BASED ON DAY OF THE WEEK?

If you mean for example to color all Sundays to red,
select the column (say A)
Formats/Conditional formatting/choose formula as 1.condition/fill in the
formula field with =WEEKDAY(A1,2)=7/choose tab Pattern/select red color/OK/OK.
