Config options AFTER installation?

Hello everybody

I have a small problem;-)
Normally I install Office 2007 in a network environment with a
config.xml and a MSP-file.
But unfortunately I've just got 30 computers from our reseller with
Office preinstalled.

Is there a chance to configure all the nice options AFTER the first
installation?
As I know the MSP-file is only used the very first time of the Office
installation.

Is there another way to reconfigure some options? I don't need to use
GPO because users should be able to change the options by themselves.
