Configuring Word Paragraph Selection and Styles

Is there any way to configure Word such that if I select text within a
paragraph and apply a paragraph style that the ENTIRE paragraph gets
updated rather than just that selected (creating a bastardized
paragraph)?

Well you can ensure that you select the entire paragraph including the final
paragraph mark by triple-clicking anywhere in the paragraph.

I would like to disable this in case I have accidentatlly selected,
like 1 character. It's a nonsensical editing feature so I thought
there might be a way to get around it.

W2007 works the way you wish for all pasting if Enable linked styles is
turned off and for pasting of unlinked styles when linked styles are enabled.
