I would like to search my contact list by the country that was entered in the
contact. In other words, I can't remember the name of an individual but I do
remember that I met him in China. Therefore, I would like to review all the
contacts that I have entered for that have China in the country field. Can
this be done?

Sure. Enable the Advanced toolbar in Outlook, then click the Arrange By
drop-down, selecting "By Location". Or, click View>Arrange By>Current
View>By Location
