Sometimes my Outlook remembers an email address for me, (all I need to do is
start typing it and it finishes it), and sometimes it doesn't. What can I do
to get it to remember every email contact I have typed in previously. Also
can it be set to remember addresses that have been sent to me that I have not
sent?

You did not post your Outlook version. Only Outlook 2002 and 2003 provide an
autocompletion feature, and if it is enabled, it will store the email
address of each message you send, not just random ones as you are
suggesting.
