Content such as charts replaced by dialog such as {EMBED, etc}.

Apparently as a result of some update or other, all my Word 2003 documents
now show "{PAGE }" instead of the actual page number, "{EMBED Excel chart,
etc}" instead of the actual chart, and similar dialog for hyperlinks instead
of the active hyperlink itself. What happened, and how do I fix this
maddening problem?!

Your documents are showing the field codes instead of the result of the
filed. You can either press Alt+F9 or go to Tools Options View and make sure
that the "Field Codes" check box is unchecked. This will show the result of
the field (page number, chart etc.)
