controlling user access to sensitive data (in form access)

I am looking at restricting access to sensitive data by means of asking for
'password' on opening of form.

For example: When we open a word/excel file which is password protected

Is there a similar thing (or any other way of password protection) that can
be done using INFOPATH 2003?

No, InfoPath does not currently have that functionality, but you could do
something similar to what I did in this article:
