Mary has pointed you to some resources for producing only an outline drawing.
Word can remove coloring from .WMF/.EMF graphics, for other types the closest it comes to providing black and white is to use the
recoloring tools in Word to display an inserted picture in Black and white, but whether that will meet your needs depends on whether
or not you can accept the 'solid' and 'shaded' areas being filled in as black. You can undo the change, Word doesn't actually
change the picture, only its appearance.
To see how it looks, after inserting your picture, with the picture still selected
Word 2007
Picture Tools=>Format=>Adjust=>Recolor=>Color Modes=>Black and White

View=>Toolbars=>Picture=>Color=>Black and White
