Converting a date to text

I link data into my Access module from CSV files, thus, Access won't let me change the the type of data, so this is what I want to do:

Can I convert the imported date format from a standard date/time into say Sep-03

However I achieve the above, is there then a way of converting the Sep-03 into a text field so that Excel won't recognise it as a date.
