converting some fields from Word to InfoPath

I have a Microsoft Word document that I receive repeatedly in my
webapplication from a site. The document is consistent...it has fields with
data in them that I need and it has blank fileds that I ned to fill out
online.

Can I specify which fields I want InfoPath to convert and which fields I do
not want it to convert? Within the web application on the server?

Once I have filled out the blank fields, can I then convert it back to a
locked Word document?
