Converting Templates from XP to Office 2007

I wonder if someone can help me. I'm in the process of converting my
customized templates from XP to Office 2007. Everything's going okay, but I
can't find how to create what used to be called a custom toolbar for macros,
styles, etc. The only toolbar I seem to be able to customize is the Quick
Access Toolbar. Help?! My users will go insane if they don't have easy
access to those items.
