Corrupt view of Custom Field Name / drop down Values

I have an issue where I have created custom enterprise fields and data in them with lookup tables in Enterprise Server. Now they are not displaying correctly in the Project Professional 2007 client when saving a new project. The Values in the drop down lists are jumbled / crossed over. They have lost their relationship to the Custom Field Name.
