Create Brochure Document

I am trying to set up a word document to look like a conference brochure that
is folded and printed on both sides

Effectively it is a landscape document (8.5"*25.5")that folds over twice and
looks like three 8.5/11" sheets. I cannot seem to set this up in word. Can
someone provide me with some insight.

You will have to create this as individual pages. The absolute maximum
dimension for a page in Word is 22".

So lets say I compromise and go with the 22", how do I set it up for a 3-Fold
in Word 2007.
