A slight variation on a theme:
I quite often want to attach a document to a template after I have created
it from a blank (Normal-based) document, or to change the template to one
that's subtly different if, for example, the document has become more
complex than was envisaged when I started off.
Within Word, you can locate templates to attach/detach them to the document
you have open via Tools menu => Templates and Add-ins. The template's name
and location shows in field at top left. To change the template on which the
document is based, click on the "Attach" button and navigate.
I made up a button on a toolbar to open the ³Templates and Add-ins² window
(that is, Tools menu => Customize => Customize toolbars/menus => Commands
button => [Categories box] Tools => [Commands box] Customize
toolbars/menus).

That's it ... with the possible exception of Applescript and/or VBA
shortcuts, which I'm afraid I can't help you with.
We all hope to see restored the ability to open a document from a template
via the Finder (still possible in Word for Windows). Hopefully in a future
version of MacWord.
