Custom AutoFormats

Is there any way to customize AutoFormats for tables, so that a table can be
assigned an entire range of attributes (cell width and height, borders and
shading, etc.) with a single command?

You can't make tables in Entourage. Try Word. Table menu/Table Properties...
You could save the document containing the empty table, after you format it,
as a template (or stationery), Then open a copy every time you need it. I
can't see where you could add your own table to Table/Table Autoformat... Or
the specifics you want could be defined in a macro, and the macro assigned
to a button and/or keyboard shortcut., which would insert you custom table
when clicked or pressed.

You'd need to write to the appropriate newsgroup. This is very specialized,
and the same on Windows as in Mac. So (subscribe and) write to

microsoft.public.word.tables

If it turns out there's anything Mac-specific (which would just be to with
file paths and things like that) you could check in at .mac.office.word too.
