I have a 200 page document and I want headers and page numbering to start on
(physical) page seven. In other words the previous six pages will not
display headers or page numbers (but do contain text in the main body). I am
using Word 2007 Home Edition.

You can do this by inserting a section break before page 7 (Page Layout tab,
Breaks, Next Page), then turning off the Same as Previous setting (Insert
tab, Header, Edit Header... the Same as Previous tool is in the Header &
Footer Tools - Design tab). With Same as Previous turned off, you can now
set different headers for the two document section.

1. Replace the existing page break between pages 6 and 7 with a
next-page section break by selecting the page break and clicking on Page
Layout | Breaks | Next Page. This will divide your Word document into
two sections, with the first 6 pages in Section 1 and the remaining
pages in Section 2.
2. Click on Insert | Header | Edit Header. If necessary, press the
Down Arrow key until your cursor is in the Section 2 Header. Turn off
"Link to Previous" in the Navigation group on the Ribbon. Type the
desired Section 2 Header text. Click on Page Number, and choose a page
number position. Click on Page Number | Format Page Numbers | Start at:
1 | OK.
