custom menu and shortcut keys

Is it normal to have to press AND release the alt key for keyboard
shortcuts with custom menus? I thought my shortcut keys weren't
working because if I use alt and the letter at the same time, I get a
beep. But then I discovered that if I release the alt key and then
press the letter, it works.

Also, why is "Shortcut Text" in the menu item properties greyed out?

As for the ALT and then release and press the key, it is normal to do that
for hot key shortcuts within programs.

I've tried it in several programs and the press and release works, but
so does press and hold. I have always used press and hold because
that's how all other keyboard shortcuts work.

In Microsoft Office Programs, typically you activate the menu by pressing ALT
and then you select the appropriate letter. That's how I've always worked
with hot keys in Office. If they have a CTL + Letter then it is different.
Or a CTL + ALT + Letter. But as far as I know, just the ALT key requires you
to click ALT, release and then the letter. I may be wrong but that's how I'd
gotten used to doing it.
