Yes, you can create icons and import them.
1) They need to be 16 x 16 or 32 x 32 pixels RGB bitmaps.
2) Word uses 24-bit BMP format internally, but it can also import PNG and
GIF pictures.
3) Make your icon in a graphics editor, at the correct size and format,
then put it on the clipboard (Copy).
4) Now, go into Customize Toolbars click the button you want to change
(left-click, once) to select it.
5) Right-click the selected icon and choose Properties
6) In the top left corner where the icon appears, drop down the disclosure
arrow
7) From the menu that appears, choose "Paste Button Image".
8) OK your way out, and make sure you save to the correct template, and
that you save (and BACK UP!!) the template. I do most of my customisation
in Normal template. After 20 years, there's well over a million dollars
worth of customisation programming effort in that file. I wouldn't want to
lose it

Thanks. Right now I have the text on my toolbar, amidst all the icons. I was
hoping there was some way to create/import an icon. Guess I'll stick with the
old keyboard commands as you suggest. This link might give you a chuckle
